Giggles and Monkeys




Let me start off by saying: Lauren is funny as hell. She says funny things, does funny things and makes funny faces. It makes every day of sleepy eyes, headaches, over worked muscles, burnt out job crap, and bills paying all the more easier. But....the other day she did something that we will never forget and it made me cry from laughter. I will just say it involved running around the house naked, well, wearing socks...and a monkey from the Barrel of Monkeys game. You can only imagine the craziness that ensued.

Olivia will probably be the same way...just one of her big, cheeky smiles can wipe the crab right off of anyone.

People tend to say "You should wait to have kids until you can afford them."

I slightly disagree. If you wait to be able to afford then, you never will have kids. You should wait until you can mentally afford them because they are a lot of work. But with every smile and barrel of monkeys, being mentally broke here and there is okay.

I'm glad that we didn't wait any longer because they are awesome. I am biased, but those who know them, know what I'm talking about.

Smoky Chipotle Hummus
Yields 5 cups.

Ingredients
2 (15.5 ounce) cans garbanzo beans, drained
1/2 cup water
1/4 cup tahini (sesame-seed paste)
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 canned chipotle pepper in adobo sauce
2 cloves garlic
1 1/2 teaspoons cumin
1 (7 ounce) jar roasted red bell peppers, drained
6 oil-packed sun-dried tomatoes, drained
1/2 cup chopped cilantro
1/2 teaspoon salt
ground black pepper to taste
Directions
Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base. Transfer to a serving bowl, cover, and chill until ready to serve.
